Mark Beland, the executive chef at the Dan Abraham Healthy Living Center Cafe, prepared a Valentine's menu that includes heart-healthy Roasted Beet with Pear Salad, Duet of Sweet and Spicy Scallops and Fresh Fruit with Dark Chocolate and Red Wine Reduction. His scallops get striped with pureed roasted red pepper. "For a Valentine's meal, it's a great way to splash some red across the plate," Beland said.
